Mouthwatering and Nutrient Dense GF and Vegan Soft Bake Cookies!
Let’s be real everyone, my name is Kate and I love sweets. They don't always love me back, though, since sugar is sadly a neurotoxin in excess AND most baked treats are rich in gluten and dairy, personally causing me and a ton of my friends and clients systemic inflammation.

What if sweets don’t have to equal pain? It’s all about creating balance in your diet and becoming a bit more mindful in your consumption and it IS possible to enjoy these delectable treats.
With my limitless mindset I decided to get smart and find easy and creative ways to pack in as many nutrients as possible to my baking and cooking to keep it going for my kids since it was a part of many fond memories with my own mother. I’ve been diving into my wellness toolbox and the amazing community around me to come up with a few lower glycemic variations on these awesome nutrient dense cookies. They’re chewy and like the perfect soft bake.
I’ve included spices that help with blood sugar regulation, oral hygiene, inflammation, and digestion as well as extra goodies packed full of fiber and protein to keep you and your kids satiated while keeping the inflammation at bay.
Feel confident you’re balancing out what you and your kids take in while enjoying something delicious and nutrient packed.
Ingredients:
2.25 c GF flour (with xantham gum, otherwise add 1 tsp)
1.5 c coconut sugar
8 tbsp vegan butter (Earth Balance works great!)
1 tsp baking soda
1/4 tsp Himalayan sea salt (or whatever you have)
1 tbsp pure organic vanilla extract (makes a big flavor difference)
1/2 c unsweetened apple sauce
2 tbsp cinnamon
1/2 tsp cardamom
1/2 tsp ginger
dash of cayenne pepper (optional!)
Add ins:
1/2 c dark chocolate chips
1/2 c sliced almonds (pecans pecans walnuts are great too)
1/4 c chia seeds
1/2 c chopped apples
1/2 c shredded coconut
Instructions:
Preheat oven to 350 F
Mix all dry ingredients in mixing bowl (I use my KitchenAid mixer).
Add all wet ingredients and mix thoroughly until combined.
Choose the mix ins that you want to explore! I personally wing it on proportions and change the ratios each time…you can’t really screw it up since they’re all delicious and they all work great with the recipe! I’ve made with and without the chocolate.
Mix together on low until incorporated.
Place tbsp size balls of dough on baking sheet and smash flat so they’re 1/4 inch or so thick. They barely expand, so how you flatten them is how they turn out.
Bake on an air bake pan for approximately 15 minutes. Ovens are different and I'm baking at altitude, so keep an eye on the cookies. They should look dry across the top!
Leave on cookie sheet for 3-5 minutes and then pop them onto a cooling rack. They’re so moist that if you forget to move them to the rack, they’ll be okay but a little less easy to pop off the pan.
Store in a tin or air tight container to keep them super soft and delicious!
